Carl Noller comes from Chester and has a 20 year career in cooking that includes roles at the Chester Grosvener Hotel and Gordan Ramsay’s two Michelin star Aubergine restaurant. He joined the Heathcotes family in 2007 and has worked in many of Paul’s restaurants before becoming head chef at Heathcotes Brasserie and The Olive Press Preston.
Born and bred in Cumbria, Stuart Wilkinson has had a career in food and service that includes positions at The Glass House restaurant in Ambleside, assistant manager at the 2 AA Rosette Red Lion Hotel in Henley-on-Thames, The White Water Hotel in Cumbria and The Sun Inn,Hawkshead in the Lake District. He is currently the general manager at Heathcotes.
Our owner Paul Heathcote MBE has had a long and illustrious career in cooking including stints Switzerland, Sharrow Bay Hotel, Ullswater, The Connaught in Mayfair, London and Le Manoir aux Quat’ Saisons. His world-famous Longridge Restaurant garnered numerous awards including 2 Michelin Stars and Egon Ronay Chef of the Year.
